Mexican Biscuit Casserole

This Beef Enchilada Bubble Up casserole is a weeknight favorite. It is super easy to make and everyone cleans their plate! Taco meat, tomato sauce, enchilada sauce tossed with biscuits and topped with cheese. Comfort food at its best! All you need is some chips, salsa, guacamole, and queso dip and you are set. I’ll take this over the Mexican restaurant any day. Give this a try for your next taco night. I promise you won’t be disappointed.

How to Make Beef Enchilada Bubble Up

This is a breeze to make.Start with browning some ground beef. Add taco seasoning, enchilada sauce, tomato sauce, and cheese. Stir to combine. Cut refrigerated biscuits into fourths and stir them in the meat mixture. Spread the biscuit mixture into the prepared baking dish. Bake for 25 minutes. Sprinkle the casserole with more shredded cheese and bake until melted.

  • This recipe is made for the smaller can of biscuits – NOT the bigger Grands biscuits. I used two cans of PillsburyFlaky Layers Biscuits Buttermilk. It is a 6-oz can of biscuits with 5 biscuits in each can. You will need 10 total biscuits for this recipe.
  • You can substitute ground turkey for the ground beef in the casserole.
  • Feel free to add vegetables to the casserole. Black beans, corn, onions, olives, peppers are all good.
  • Make sure to spread out the biscuits in the pan so they cook evenly. You don’t want big gobs of uncooked biscuits in the casserole.
  • Can Beef Enchilada Bubble Up be made in advance? Yes. I prefer to cook the meat mixture ahead of time and toss with the biscuits right before baking. I find that the biscuits don’t rise as well if they sit overnight.
  • Can Beef Enchilada Bubble Up be frozen? Yes. Bake the casserole and cool completely. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to serve, thaw and reheat covered in the oven or in the microwave.

Beef Enchilada Bubble Up – this cheesy Mexican biscuit casserole is a family favorite! Only 6 ingredients and ready in 30 minutes. Ground beef, taco seasoning, tomato sauce, enchilada sauce, biscuits, and cheese. We love this for an easy lunch or dinner. It is also perfect for tailgating and football parties! Ingredients:

  • 1 lb lean ground beef
  • 1 (1-oz) package taco seasoning
  • 1 (8-oz) can tomato sauce
  • 1 (10-oz) can enchilada sauce
  • 2 (6-oz) cans refrigerated biscuits (10 biscuits total)
  • 2 cups Mexican Cheese blend

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.

  • Brown ground beef in a large skillet and drain off fat. Add the taco seasoning, enchilada sauce, tomato sauce and 1 cup of cheese. Stir to combine.

  • Cut the refrigerated biscuits into fourths and stir them in the meat mixture.

  • Spread the biscuit mixture into the prepared baking dish.

  • Bake for 25 minutes. Remove from the oven and sprinkle remaining cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
