These stuffed cucumber bites are an easy cold appetizer or snack. They make a tasty addition to a picnic or packed lunch too.
This is an old cucumber recipe that I have been making since I left University (only a few years old then, "ahem"). My flat mate and I at the time were having a surge of salad recipes and this is one I made as part of the salad feast.
I remembered the recipe recently as was looking at my fridge for inspiration to make a light lunch and saw the usual block of cream cheese and cucumber. Knowing that I had some walnuts in the cupboard, my brain library woke up, dusted off the archives and remembered the stuffed cucumbers I used to munch on.

Ingredients
Just a few simple ingredients make this tasty low carb snack.
- Cucumber - we prefer an English cucumber as they are crisp and easy to use.
- Cream cheese - full fat is preferable
- Walnuts -finely chopped and toasted for extra flavor.
- Fresh Parsley - finely chopped.
- Paprika -for a touch of heat. Can be omitted.
What type of cucumber for cucumber bites?
When making cucumber bites, it's best to choose a cucumber variety that is crisp, relatively small, and has thin skin. English cucumbers (also known as hothouse or seedless cucumbers) are often a popular choice for making cucumber bites because they have a milder flavor, thinner skin, and fewer seeds compared to other cucumber varieties. These characteristics make them ideal for creating a tender and crunchy texture in your cucumber bites.
You can also use other cucumber varieties, such as Persian cucumbers or Kirby cucumbers, which are smaller and have thin skins. These cucumbers work well for this purpose, and their compact size makes them easy to slice into bite-sized pieces.
Ultimately, the choice of cucumber variety comes down to personal preference, but for a classic and aesthetically pleasing cucumber bite, English cucumbers are a common and reliable choice.
How to make keto stuffed cucumbers
This is such a simple appetiser recipe. I cut the cucmbers into slices, scoop out the seeds to stop any sogginess, and fill the cucumbers with a mixture of softened cream cheese, walnuts and herbs. They can be made ahead too. Just cover and store in the fridge until you are ready to eat them.
Mix the cream cheese filling.
Peel the cucumber skins into stripes.
Scoop the seeds from the cucumber.
Stuff the cucumber boats with cream cheese mixture and slice.
Recipe Tips
Although I cut my cucumbers in half you could cut them in thick slices and pipe or slather the cream cheese mixture over them. Perhaps kick the spices up with a little bit of chili in them too.
Storage
These tasty stuffed cucumbers can be made ahead and stored in the fridge. Keep them in an air tight container for serving later.
Stuffed Cucumber Variations
Stuffed cucumber bites with cream cheese can be incredibly versatile, and you can create a variety of delicious variations to suit your taste preferences and dietary restrictions. Here are some ideas for different cream cheese-based fillings for your cucumber bites:

- Cream cheese mixed with grated cucumber (squeeze out excess moisture), minced garlic, Greek yogurt, and chopped fresh mint.
- Season with salt and pepper to taste.
- Top with diced cucumbers, cherry tomatoes, and a drizzle of tzatziki sauce.
- Buffalo Chicken:
- Cream cheese mixed with shredded cooked chicken, buffalo sauce, and crumbled blue cheese.
- Season with a pinch of garlic powder and black pepper.
- Top with a celery stick for crunch.
- Vegan Option:
- For a vegan variation, use dairy-free cream cheese or a mixture of tofu and vegan mayonnaise.
- Add herbs, spices, and vegetables to create various flavors.

Ingredients
- 1 large cucumber
- 1 oz walnuts chopped
- 3 oz cream cheese
- ¼ teaspoon white pepper
- 1 tablespoons Fresh parsley chopped
- 1 teaspoon Paprika to serve optional
Instructions
Cut the top and bottoms off the cucumber.
Lightly peel the cucumber lengthways, leaving the odd strip of skin on, as a stripe.
Cut the cucumber in half lengthways and scoop out the seeds.
In a bowl mix the cream cheese with the pepper and parsley with a fork, mashing well.
Add the walnuts and combine thoroughly.
Spoon the mixture into the cucumber halves.
Cut the cucumber halves into four quarters.
Sprinkle with the paprika and any extra parsley.
