Classic pork and peas are stewed on the stove top. This can take some time if you have cheaper cuts of meat. In comes my secret weapon. . . the INSTANT POT.

If you’ve never heard of an Instant Pot you’re missing out. The Instant Pot is one of my favorite countertop appliances. It is an all in one electric pressure cooker, slow cooker, rice cooker, yogurt maker, and so much more.

This is the one that I have.

If you love the Instant Pot check out some of my favorite recipes

  • Corned beef and cabbage

What can I use instead of pimentos?

Pimentos are a type of red pepper. It is sweeter and more aromatic than that of the bell pepper.

If you don’t have pimentos or can’t find any you can replace it with bell peppers.

What cut of pork should I use?

Pork butt or shoulder is a cheaper cut of meat and can be tougher, however the Instant Pot will help to make this tender and juicy.

How long does it take to cook?

I used pork butt or shoulder and cut into smaller pieces. This takes about 25-35 minutes and can cut down on cook time. If you cut larger chunks of meat your cook time may increase. If you use a cut like the tenderloin, cook time will decrease, however the cost may be higher.

All the ingredients are available here but not same brands as HI. Had to add a little sugar to it as was a little too tart for us. LOVE IT! Thank you and will be making many of your recipes.
