Vanilla fudge that tastesjust like the old-fashioned "milko" lollies. It's creamy and rich and has the most intense vanilla flavour.

This recipe was originally published on the Queens Food website. The method given was for a stovetop but I wanted to cook it in the Thermomix. I find making fudge on the stove a real chore. The mixture splatters and sticks to the bottom of the pan. Honestly... maybe I'm just a lazy cook! I decided to try converting the method for Thermomix and it worked perfectly.

I've put together a few watchpoints but it is truly one of the simplest treats you will make.

Making fudge is really simple in the Thermomix if you follow the instructions. There are a few things that can go wrong so I will explain those to you before we get cooking.

  1. Make sure not to get condensation in the TM bowl. This means leaving the MC out so steam can escape. Also, be very careful when you lift the lid not to let the condensation drip into the bowl. If condensation gets into the bowl it can make the texture of the fudge feel grainy. Grainy isn't nice!
  2. Follow the exact instructions for temperature and heating. The timing allows the mixture to get to a set temperature. If it doesn't cook long enough it won't set properly when it cools.
  3. Place the chocolate and any other flavourings in at the end of the cooking time. If they are added prior it can interfere with the setting and reduce the intensity of any flavourings.

What other fudge flavours can you make? Well, I'm pleased you asked. I've been experimenting with so many different flavours of fudge lately! So far, this vanilla fudge and Salted Caramel Fudge are my two favourites.

I have also made Cookies and Cream Fudge for my son's girlfriend and Chocolate mint fudge. The Chocolate mint fudge was decorated like a Christmas tree, but you could always make it in a regular slab baking tray.

Thermomix Fudge FAQ

How long does the fudge last?

Fudge can last almost indefinitely in the fridge. You can make it months ahead of time.

Does the fudge need to be refrigerated?

The fudge will last longer if it is refrigerated. In winter it can last for a week or two at room temperature. In Summer I would always refrigerate the fudge.

What can I substitute for glucose?

If you can't get glucose you can substitute more Golden Syrup.

What can I substitute for Golden Syrup?

I have added a link to golden syrup for international readers. There really isn't any substitute that will work in place of golden syrup. Molasses is too rich, dark and earth and maple syrup will stop the fudge from setting.

Equipment

Ingredients

  • 395 g can condensed milk
  • 200 g white "Dream" chocolate
  • 220 g caster sugar
  • 125 g butter
  • 40 ml glucose
  • 4 teaspoon Queen Vanilla Bean Paste
  • 2 teaspoon Vanilla Extract

Instructions

  • Place the white chocolate in TM bowl. Blitz 5sec/Speed 9.

    200 g white "Dream" chocolate

  • Reserve the chocolate in a bowl for later use.

  • Add condensed milk, chopped butter, sugar, and glucose syrup to TM Bowl. Cook for 8mins/100C/Speed 3 (MC OUT).

    395 g can condensed milk, 220 g caster sugar, 125 g butter, 40 ml glucose

  • Scrapedown the bowl being careful not to drip any condensation into the fudge.

  • Cook for a further 20mins/Varoma/Speed 3 (MC OUT).

  • Add the chopped chocolate and both types of vanilla to the TM Bowl. Combine 10secs/Speed 4.

    4 teaspoon Queen Vanilla Bean Paste, 2 teaspoon Vanilla Extract

  • Repeat this process until the chocolate has melted and is combined.

  • Pour the fudge into a lined square 20 x 20cm tin or slice tin, refrigerate until set.

  • Slice the fudge into squares.

Notes

This recipe is made super easy in the Thermomix.

Tip: Make sure to cut the fudge prior to refrigerating.
