Especially as I get older, Christmas gift giving is so often about wanting to give the people in our lives that make it extra special a little something to show them how much we appreciate them. These are the perfect, thoughtful gifts for the girl guide leader, or piano teacher, or neighbour. They’re also perfect as a hostess gift this time of year. For the person on your list that already has everything they need, but you still want something special for, like an elderly relative, these would be perfect. There’s something so special about giving homemade treats, and these all have a little extra special wow factor!

To kick off the week, I’m sharing my recipe forHomemade Coffee Marshmallows. If you’ve never made homemade marshmallows, this is the year to give them a try. They’re not hard to make, and they’re so fluffy, and springy, and yummy you won’t regret it.

These are perfect for Christmas, but also a great treat anytime of year. These delicious marshmallows are perfect to add to desserts, use for gourmet smores in the summer months, dip in chocolate for fondue, add to hot cocoa, or even your morning coffee.

Candy Thermometer

You will need a candy thermometer to make this recipe. They’re inexpensive, under $10 and a good investment. Candy treats can be a little tricky, but once you get the hang of them they sure are crowd favourites. I’ve made marshmallows probably 10 or 20 times and never ever had a fail, so these would be a great candy recipe to start on if you’re nervous about having to use the thermometer.

Coffee Marshmallows

Regular marshmallows are delicious, but I thought it would be fun for Christmas to make a fun flavour. In the past I’ve experimented withChocolate and Bailey’s flavour, and this time tried coffee. If you’re a coffee lover, these are the best marshmallows ever.

These are perfect in your hot chocolate, or just on their own. They have a great coffee flavour, with just a little coco to make them a bit mocha. What could be better than a mocha homemade marshmallow?

Getting The Coffee Flavor

We used real coffee to make our marshmallows. I used our French press coffee maker, but you can make your’s how ever you normally make coffee, just make it extra strong. You could use an instant espresso powder, regular instant coffees, or cold brew coffee, but it’s just as easy to brew some fresh coffee, and let the hot mixturego cold, or pop it in the fridge to cool down.

We love using real coffee in this recipe and avoiding using a coffee flavoring or syrup which can add an artificial taste to the finished marshmallows.

Instructions

    1. Put the gelatin and 1/2 cup of the cold coffee into the bowl of a stand mixer, with the whisk attachment. Set aside.
    2. Combine the other 1/2 cup of coffee, white sugar, corn syrup and salt in a medium saucepan, and cook, covered over medium-high heat for 3-4 minutes. Remove the lid and clip a candy thermometer onto the side of the pan and continue cooking until the mixture reaches 240 degrees F, approximately. Once the mixture reaches this temperature, take it off the heat.
    3. With the mixer running on low speed, slowly pour the hot sugar syrup mixture down the side of the stand mixer bowl into the gelatin mixture. Then increase the speed to high. Continue to whip until the mixture becomes very thick and is lukewarm, about 12 to 15 minutes. Add the vanilla, and 2 tbsp of cocoa powder during the last minute of whipping.
    4. While the mixture is whipping prepare the pans as follows: Combine the powdered sugar, corn starch, and 2 tbsp of cocoa in a small bowl. Lightly spray a 9 by 9-inch baking pan with nonstick cooking spray. Add 1/4 cup the powdered sugar mixture and move around to completely coat the bottom and sides of the pan. Return the remaining mixture to the bowl for later use. When ready, pour the marshmallow mixture into the prepared pan, using a lightly oiled spatula for spreading evenly into the pan. Dust the top of the marshmallows with more of the powdered sugar mixture to lightly cover, save the rest for later.A
    5. llow the marshmallows to sit uncovered for at least 4 hours and up to overnight at room temperature.
    6. Turn the marshmallows out onto a cutting board and cut into 1-inch squares using a pizza cutter dusted with the icing sugar mixture, or a sharp knife. Once cut, lightly dust all sides of each marshmallow with the remaining powdered sugar mixture. Store in an airtight container for up to 3 weeks.

The easiest way to cut these, is to use a pizza wheel. It’s also fun to use cookie cutters to make some shapes, like snowflakes and stars.

Homemade marshmallow making is a multi-day process, but well worth the effort, and not a difficult process. Homemade marshmallows have all the magic of marshmallows, but more so. They are so much lighter and fluffier than store bought, they’re more delicate and taste fresher. If you’ve never tasted a homemade marshmallow then you’re in for a little marshmallow magic.

These coffee marshmallows are perfect for any coffee lovers. They don’t have an overpowering strong coffee flavor that’s bitter, but it’s not too subtle either. Also because they’re made with real coffee and not some chemical concentrated syrup, they have a lovely natural flavor.
